Joining this evening's dinner and discussion are co-hosts Willy Warner and Robert Chandler from Steve Connolly Seafood in Boston. Warner, the national sales manager, and Chandler, the senior buyer and corporate marine biologist, will present a full display of different species of fish and discuss the hot debates going on in the seafood industry today. They will be available before, during, and after dinner to answer all of your questions.
Chef Severson has designed a special blind-tasting menu to encourage dialogue. Three of the six courses are unmarked taste-off entrees, which allow you to judge flavor, texture, and appearance without knowing the source of the fish. Are pricey diver scallops really better than the dry-packaged dredged variety? Can you taste the difference between wild and farm-raised salmon? Is sea bass "safe" to eat? Each diner receives a tasting sheet to make notes and rate the "contestants." You will leave with a fresh perspective on buying, eating, and ordering sustainable seafood.
