They will be available before, during, and after dinner to answer all of your questions.
Chef Severson has designed a special blind-tasting menu to encourage dialogue. Three of the six courses are unmarked taste-off entrees, which allow you to judge flavor, texture, and appearance without knowing the source of the fish. Are pricey diver scallops really better than the dry-packaged dredged variety? Can you taste the difference between wild and farm-raised salmon? Is sea bass "safe" to eat? Each diner receives a tasting sheet to make notes and rate the "contestants." You will leave with a fresh perspective on buying, eating, and ordering sustainable seafood.
